Chicken Pillows
Chicken Pillows
2-3 cups shredded or chopped chicken (I buy a Rotisserie chicken and chopped it into bite sized pieces).
1 can Pillsbury refrigerated crescent rolls
1 8 oz block cream cheese, softened
1 teaspoon garlic powder
1/8 tsp pepper
1 bag Pepperidge farm stuffing mix (crushed, not cubed)
Preheat oven to 350.
In a medium bowl, combine the cream cheese, garlic powder and pepper until well combined with a hand mixer. fold in chicken. Set aside or refrigerate until ready to use.
Unroll crescent dough, separating into 4 rectangles; press perforations to seal. Spoon 1/4 of chicken mixture into center of each rectangle; bring corners of each rectangle together over chicken mixture, and twist gently to seal.
Brush pillows with melted butter and then dredge and press into crushed seasoning mix and place on an ungreased baking sheet. Drizzle tops with butter and bake uncovered for 20-25 minutes or until golden brown.
Parmesan Sauce:
3 tablespoons butter
3 tablespoons flour
1 chicken bouillon cube
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups milk
3/4 cup freshly grated Parmesan cheese
1 cup sour cream
In a medium saucepan, melt the butter. Whisk in the flour, cooking over medium heat for 1-2 minutes, stirring constantly, until the mixture is golden and bubbly.
Slowly whisk in the milk, stirring in the chicken bouillon, salt and pepper once the milk has been completely added. Stir constantly over medium heat until the sauce thickens and bubbles, about 5-10 minutes, taking care to adjust the heat accordingly so the sauce doesn’t burn on the bottom.
Stir in the Parmesan cheese and cook, stirring, until the cheese is melted. Remove the sauce from the heat and stir in the sour cream. Thin the sauce with a little milk if needed.

Toaster Oven Baked Smores
Take one graham cracker ... break it up into bite-sized pieces and place in the bottom of your dish. I have 3x5 individual dishes that worked very well. Break up a Hershey's Milk Chocolate candy bar and place over the graham crackers. Then cover this with miniature marshmallows. Bake in Toaster oven for about 10 minutes or until marshmallows start getting toasty brown and - take out and enjoy!

Green Chile Chicken
Green Chile Chicken Over Asparagus
Steps
Ingredients
1 lb fresh asparagus spears
4 boneless, skinless chicken breasts
1 tablespoon zesty Creole seasoning
1 tablespoon canola oil
2 tablespoons + 3/4 cup water, divided
3/4 cup plain Greek (or regular) yogurt
1 (1.25-oz) packet broccoli cheese soup mix
1/4 cup diced green chiles
Prep
1 lb fresh asparagus spears

Prep
- Trim asparagus, removing tough root end.
- Preheat large sauté pan on medium-high 2–3 minutes. Coat both sides of chicken with Creole seasoning. Place oil in pan, then add chicken; cook 2–3 minutes on each side or until golden.
- Reduce heat to medium-low. Arrange asparagus spears over chicken. Add 2 tablespoons water and cover; cook 4–5 minutes or until chicken is 165°F and asparagus is tender. Transfer asparagus to serving plates; top with chicken.
- Whisk together 3/4 cup water, yogurt, and dry soup mix in small saucepan; bring just to a boil on medium. Reduce heat to low and stir in green chilies; simmer 2–3 minutes or until thickened. Spoon sauce over chicken and serve.
Hummus Crostini
Ingredients
4 oz cream cheese
1/2 cup tomato basil bruschetta topping
1/2 cup fried peppers and onions
4 Deli pita bread
4 oz Deli classic hummus
Prep

Preheat oven to 450°F.
- Cut cream cheese into cubes; let stand at room temperature to soften.
- Combine bruschetta topping and fried peppers and onions. Bake bread 5 minutes or until toasted.
- Blend cream cheese and hummus together until smooth. Spread hummus mixture evenly over each toast; top with bruschetta mixture. Bake 3 more minutes or until hot. Serve.

Greek Grilled Cheese

Ingredients:
2 slices light bread
1 wedge The Laughing Cow Light Creamy Swiss cheese
2 tbsp. crumbled reduced-fat feta cheese
1 tbsp. diced and seeded tomato
1 tbsp. diced red onion
1 tbsp. chopped basil
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
Directions:
Lay bread slices flat and spread both with the cheese wedge. Top one slice with feta cheese, tomato, onion, and basil. Top with the other bread slice, cheesy side down. Spread the top of the sandwich with 1 tsp. butter.
Bring a skillet sprayed with nonstick spray to medium-high heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.
Cook until bread is lightly browned and cheese has melted, about 2 minutes per side, flipping carefully. Eat up!

Hungry Girl Frosty the Vanilla Cake!
Cake as light as a cloud... frosting thick as a blanket... No, we're not hallucinating; we're just talking about our newest creation. This cake is generously frosted with a decadent vanilla topping and ready to party. Yum!
Ingredients:
Topping
3 tbsp. (about 3/4ths of a 4-serving box) Jell-O Sugar Free Fat Free Vanilla Instant pudding mix
3 tbsp. Splenda No Calorie Sweetener (granulated), or HG Alternative
1/2 tsp. vanilla extract
1 1/2 cups Cool Whip Free (thawed)
3/4 cup fat-free cream cheese, room temperature
Cake
Half of an 18.25-oz. box (about 1 3/4 cups) moist-style white cake mix
3/4 tsp. baking powder
1 cup club soda, room temperature
1 tsp. vanilla extract
1/2 cup liquid egg whites (about 4 egg whites)
Directions:
Preheat oven to 350 degrees. Spray a 9" round cake pan with nonstick spray.
To make the topping, in a medium bowl, combine pudding mix, sweetener, and vanilla extract. Add 3 tbsp. cold water and stir vigorously until smooth and slightly thickened. Add Cool Whip and cream cheese, and stir until smooth. Cover and refrigerate.
To make the cake, in a large bowl, thoroughly mix cake mix with baking powder. Add club soda and vanilla extract, and whisk until completely smooth.
Place egg whites in another medium bowl. With a handheld electric mixer set to medium speed, beat until fluffy, 1 - 2 minutes.
Gently but thoroughly fold egg whites into cake mixture. Pour batter into the cake pan. Bake until a toothpick inserted into the center comes out clean, about 25 minutes.
Once cool, transfer cake to a large plate. Evenly spread with topping. Slice, serve, and enjoy! (Refrigerate leftovers.)

Roasted Tomatoes
Grease a muffin pan. Cut the core out of each tomato almost to the bottom, fill with brown sugar, salt, pepper, and top off with a tsp. of butter. Bake in muffin cups at 400 degrees for about 20 minutes

HOBO Bread
HOBO BREAD..........Yumm!!!
This humble quick bread recipe has been a family staple for years. Made with raisins and lightly sweetened with brown sugar, slice off a piece tonight.
Spread it with butter and sink your teeth into heaven.
Ingredients
- 2 cups raisins
- 2 cups hot water
- 3 teaspoons baking soda
- 3 cups flour
- 1 cup brown sugar
- 4 teaspoons vegetable oil
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 1/2 cup chopped walnuts
Instructions
- Boil water and pour over raisins and baking soda. Let stand overnight.
- Preheat oven to 350 degrees F.
- In the morning add in remaining ingredients. Grease three 1-pound coffee cans and bake for 1 hour, then remove bread from cans.

Balsamic Glaze
Slightly sweet, slightly tart balsamic glaze is a great staple to keep in your pantry
Ingredients
- 2 cups balsamic vinegar
- 1 cup light brown sugar
Instructions
- In a medium saucepan, bring balsamic vinegar to a boil over high heat. Stir in brown sugar, reduce heat to low, and simmer 12 to 15 minutes, or until liquid is reduced and slightly thickened. Remove from heat and let cool.
- Place in an airtight container and refrigerate until ready to use.
There are so many uses for Balsamic Glaze. Why not drizzle it over fresh berries? And drizzling it over chicken or salmon makes for a tasty topper

- 2 cups whole-wheat flour
- 1 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups buttermilk
- 1/2 cup molasses
- 1/2 cup raisins
Instructions
- Preheat oven to 250 degrees F. Coat 24 muffin cups with cooking spray (see Note).
- In a large bowl, combine both flours, the brown sugar, baking soda, and salt; mix well. Add buttermilk, molasses, and raisins; mix well. Spoon equally into prepared muffin cups.
- Bake 35 to 40 minutes, or until a toothpick inserted in center comes out clean. Allow to cool slightly then remove to a wire rack to cool completely.

Perfected Chicken Salad
Ingredients
- 2 1/2 cups cooked chicken, diced
- 1 cup chopped celery
- 1 cup seedless grapes, halved
- 1 cup chopped pecans
- 2 teaspoons finely minced or grated onion, or more
- 1 teaspoon salt
- White pepper to taste
- Other seasonings to taste
- 3/4 to 1 cup mayonnaise
- 1/2 cup heavy cream, whipped with 2 teaspoons sugar
- Crisp lettuce or other greens
Instructions
- In a large bowl, combine all ingredients, and mix thoroughly. Chill.
- Serve on crisp lettuce or other greens.
- I like to season a whole chicken (or chicken breasts) with poultry seasoning, salt, white pepper and onion powder, cover it with water, add a whole bay leaf, and simmer it until tender. I let it cool in its own broth then debone it and dice it. This tastes far better than canned chicken.
- You may add extra minced or grated onion to suit your taste. The heavy cream may be whipped with or without the sugar. I think the sugar added to the whipped cream makes this salad taste great, but again the choice is yours.
- Using a mixture of red and green seedless grapes gives this salad a pretty color.

- 3 teaspoons chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 6 large sweet potatoes, peeled and cut lengthwise into thin wedges
- Cooking spray
Instructions
- Preheat oven to 425 degrees F. Coat a rimmed baking sheet with cooking spray.
- In a large resealable plastic storage bag, combine chili powder, salt, and pepper. Add potato wedges and shake until completely coated.
- Spread potato wedges in a single layer on prepared baking sheet. Coat potatoes with cooking spray and bake 22 to 25 minutes, or until golden and tender.

Grilled Pork Tenderloin With Molasses Sauce

Preparation
1 Stir together first 6
ingredients; remove half of mixture, and chill.
Place tenderloins in a
shallow dish or heavy-duty zip-top plastic bag; pour remaining molasses mixture
over tenderloins. Cover or seal, and chill 8 hours, turning occasionally.
3. Remove tenderloins from
marinade, discarding marinade.
4. Grill tenderloins, covered
with grill lid, over medium heat (300° to 350°) about 25 minutes or until a
meat thermometer inserted into thickest portion registers 160°, turning
occasionally.
5. Sauté onion and garlic in 1
tablespoon hot oil in a saucepan until tender. Add wine and broth; cook over
medium-high heat, stirring occasionally, until mixture is reduced by
three-fourths. Stir in remaining molasses mixture, and simmer 5 minutes. Pour
through a wire-mesh strainer, discarding onion and garlic; return to pan.
6. Stir together cornstarch
and water. Stir into wine mixture.
7. Bring to a boil over medium
heat, stirring constantly. Boil, stirring constantly, 1 minute.
8. Stir in 1/2 teaspoon salt.
Serve with sliced tenderloin. Garnish, if desired.

Coca-Cola Slow Cooker Pot Roast
Brown your roast first, seasoning and flouring. I always use Emeril's Essence and garlic powder.
Add diced peppers, onions and garlic to slow cooker.
Once Roast is browned, add to cooker.
Pour in 1 coca-cola.
Add enough water to cover roast. Add more seasonings......I like a lot!
Cook on high for 7 - 8 hours, adding mushrooms about 6 hours into cooking. Add 1/2 can tomato paste at this time, as well.
The sweetness of the coke and the spicy of the garlic and seasonings is DELICIOUS!!
And, with the leftovers, I will be serving French Dips on Thursday evening!

Beer Can Chicken
Season your chicken the way you like it. I prefer olive oil, Emeril's Essence, garlic powder and lemon juice. Rub all over bird. See holder below - place can of beer in slot and place chicken over holder. I use my grill and cook for about 1 to 1.5 hours.......meat thermometer should read 180 degrees before removing. Let chicken rest before slicing. It's so juicy, yummy and good!! My husband doesn't like chicken, so I have to come up with really good and flavorful chicken recipes!!

Freezing Strawberries
The best way to have your fruit ready when you want it....
1. Rinse and Slice to prepare for freezing.
2. Lay flat on cookie sheet
3. Place in Freezer overnight.
4. Bag individually or however you would like to be able to use it.
When the fruit starts coming out at such great prices, I stock up on all kinds of berries.
Roasted Garlic
I love to roast a lot of garlic at once to make my own dressings, marinade, olive oil.......smear it on fresh french bread - it's so good and roasting changes the flavor of the garlic, toning down it to a roasted sweetness!
Take cloves and place in foil, dousing with olive oil. Or, use a casserole dish......I have a terra cotta dish specifically to roast garlic. Bake @ 350 degrees for about 15-20 minutes.
