Coca-Cola Slow Cooker Pot Roast

Brown your roast first, seasoning and flouring. I always use Emeril's Essence and garlic powder. 
Add diced peppers, onions and garlic to slow cooker. 
Once Roast is browned, add to cooker.
Pour in 1 coca-cola.
Add enough water to cover roast. Add more seasonings......I like a lot!
Cook on high for 7 - 8 hours, adding mushrooms about 6 hours into cooking.  Add 1/2 can tomato paste at this time, as well. 

The sweetness of the coke and the spicy of the garlic and seasonings is DELICIOUS!!

And, with the leftovers, I will be serving French Dips on Thursday evening!

Beer Can Chicken


Season your chicken the way you like it. I prefer olive oil, Emeril's Essence, garlic powder and lemon juice.  Rub all over bird.  See holder below - place can of beer in slot and place chicken over holder.  I use my grill and cook for about 1 to 1.5 hours.......meat thermometer should read 180 degrees before removing.  Let chicken rest before slicing. It's so juicy, yummy and good!!  My husband doesn't like chicken, so I have to come up with really good and flavorful chicken recipes!!
He loves this one!!

Saving $$

I always bag my bread, bagels, sub rolls, English Muffins individually for freezing.  It's so easy to grab just one, and not having to worry about spoilage is a bonus!!

Freezing Strawberries


The best way to have your fruit ready when you want it....
1. Rinse and Slice to prepare for freezing.
2. Lay flat on cookie sheet
3. Place in Freezer overnight.
4. Bag individually or however you would like to be able to use it.

When the fruit starts coming out at such great prices, I stock up on all kinds of berries.




Roasted Garlic

I love to roast a lot of garlic at once to make my own dressings, marinade, olive oil.......smear it on fresh french bread - it's so good and roasting changes the flavor of the garlic, toning down it to a roasted sweetness! 


Take cloves and place in foil, dousing with olive oil.  Or, use a casserole dish......I have a terra cotta dish specifically to roast garlic.   Bake @ 350 degrees for about 15-20 minutes.
